You want one that does not attack you or try to challenge you in any way. He should be afraid of you and sees you as alpha. He can be friendly toward you as long as there is no aggression.
As for the pullets he should not be overly rough with them. He should also tidbit, shuffle his wings (like a little dance), be aware of his surroundings and sound any alarms when there is danger, and not be overly rough with the hens.
