Q: Why are these eggs hard to crack

Quote:
I've done this, too! I throw them under the house to my dog, and the stupid egg just lays there looking like an egg. Granted, it's not on concrete there, but holy cow, a store-bought egg would have broken the second it left my hand!

I came here just now for the same reason. Since the membranes are so hard to crack, I usually end up with shell pieces in my pan and those are awful to crunch into when i'm eating. I don't suppose anyone has a trick for this?

The trick to being able to peel them hardboiled is to leave them (unrefridgerated amd unwashed) on the counter for a few days. I recently discovered this trick and it works!

You don't need to age an egg for hard boiling. Most of my eggs don't make it past 2 days old. Just bring the water to a boil first, lower the egg into the water gently in a basket or with a ladle, boil it for 18 minutes or so and immediately plunge it into cool water. Gently crack the shell all around and it should slide right off.
