To make it really exciting put one of my dogs in there with them...he hehe.
I know what you are saying, but most just need room to move around and stretch their wings about once a week. Quail are more a ground bird and only take flight at last resort, when spooked as to evade (quickly) and maybe to roost.
I usually add a small brush pile and a few hiding spots. But if you get into collecting eggs, then keep in mind that you will want to be access the areas as well.
All quail like a sand box, and you can add some powdered seven dust to the sand to help keep the mites down (if any). No need for the plastic shovle and bucket though!
