Quail being incubated by broody hen - questions

Here are some updated pictures! All seven that survived hatch are still doing great. They have really learned to act like little chickens but they don't stick as close to mama as normal chicks will so I have to keep them shut up. Quail feather in so quickly!

I am trying to determine sex on the brown Cortunix but it all of them seem to have BOTH rusty brown on the chest and spotted feathers on the chest, which are supposed to indicate male and female, respectively. Here are three of the four browns... What sex do you guys think?

I think of the brown quail I have 2 boys, 2 girls, and I obviously can't really tell about the A&M. But has anyone ever had quail roosters attack you like chicken roosters do? The two of the browns that I think are males and one of the A&Ms will rush at my hand when I put it in there, and flutter against it, doing adorable fierce little pecks! It is incredibly cute because they are so little! I don't mind because I don't think it would ever actually hurt, but is this an indicator they are indeed male? I never heard of quail doing this, but they act almost exactly like tiny little roosters!
