Quail feed??

I'm thinking about getting quail some day but I need to Know if I can give them Chick starter/grower while they are young and layer pellets when they're adults?

No, give them gamebird feed, and you can do half layer and half gamebird once they are older

24-28% protein. Often labeled as Turkey Starter it if is not called gamebird feed.

Does it depend on the breed? I think I read somewhere that I could give them layer crumbles.
I was thinking about getting bobwhite or qortunix.

Doesn't matter the variety. They need high protein. They are a game bird and are built on genetics that need higher protein than chickens.

Yes, high protein. I can source gamebird feed, but it is more convenient to buy the high protein chick feed that is NON-medicated and usually mentions turkey poults on the packaging. My local TSC stocks a Dumoor brand of hi-protein (24%) crumble. My quail did not take to mini pellets, they prefer crumble. I provide chick grit in a small and clear parrot type feeder on the side of the cage. I provide cuttle bone that I zip-tie to the side of the cage for extra calcium.
