Do people eat the heart, gizzard and liver of quail like a chicken? Is it good? (I know subjective...) or too small to bother with?

How long do quail live?
When are they no longer productive and only pets?
Are they tough if eaten after a year or two old?

How do you pronounce Coturnix?

I probably say it wrong but I say Co turn ix to process I use scissors takes all of a minute or 2 if you google quail processing on utube there is a vid with an old guy that is a good way to do it
 
I process quail and chukar the same way. Take my hatchet, chop the head off in one blow and allow blood to drain out neck for a few moments....then spread the wings on the ground and stand on them and pull upward with steady force on the legs..this will pull the breast meat out, leaving ALL entrails behind...then skin the legs, and you're done with the bird in less than 2 minutes. We keep the hearts, but have tried the liver and gizzard, and those are both horribly tasting. so pretty much a waste to try and save those.

Otherwise cleaning the bird is super easy and quick.
 
I am trying this with two extra males I have soon.Take the bird,hold it firmly in hands and hold it beak facing you,then go to a hard surface and slam down head firmly and strongly.I had to do this with my pet quail Brownie who was suffering terribly and I had to put her out of her misery,it worked very well and was quick and easy (I couldent eat her).Then take some poultry shears or very sharp scissors and cut feet off at the joint and same with wings.Then use your hands and skin the bird,then take the shears and cut up both sides of backbone and pull away,most of the guts should come out with it.
 
I use a pair of bolt cutters to kill it or I put it's head through a bottle and pull. I used to just yank the neck but the blood splattered.

They live 3-6 years if housed and cared for properly. I just skin the whole bird and cut the legs off at the knee. I take the wings off and then slit right around the breast to gut it. Wash it, some duck's unlimited poultry rub and on the grill!
 
So you can still eat them when they are older? They arent awful tough like an old chicken? And nobody eats the liver or gizzard?
