Since I plan on parting out each bird, do I need to worry about de-feathering? Seems like I can remove the skin like I would a goose to get to the breasts, thighs, etc.

I know how to remove feathers. My question is wether I need to or not in order to get to the meat. If I'm parting the bird out I'm not sure I need to.

kengland: You're right. Skinning chickens is just as hard/easy as any small game. I found that the feathers are good to hold onto when you skin. When you're done, the meat will be perfectly accessible.

Here's what my guy looked like when I skinned him:

Very nice! I plan on renting a plucker for about 10 birds and parting out another 20. I thought the feathers would come off with the skin (kind of like a jacket). Thanks for the confirmation!
