Question about Feed & eating eggs over easy....

As a general rule more protein is better, so if you have option of 16% or 18% I'd go with 18%. You may still need to supplement calcium even with layer, as every individual bird has their own needs (however you may find it sufficient to simply offer eggshells instead of oyster).

If you intend to continue with S&P whole grain mash feed (layer or grower) it's best to ferment it to ensure the birds can't pick out specific grains, and that they eat all the powdery fines that contain the vitamins, minerals and added protein.

As far as the runny eggs, dunno why, but a lot of people seem to be nervous to eat their own produced food even though they know it's going to be fresher and they know what went into producing it. Calling my yolks runny is generous at time, sometimes I barely cook the whites and the yolks are still cool in center - however I've never gotten sick eating my own eggs that way.
 
I'm new to chickens so I can't speak to the feed question, but I've eaten my eggs sunny side up my whole life! Also for the past few months I've been adding a raw egg to my coffee every morning for extra protein and I'm doing just fine! 50 years down, 50 more to go. ;)
 
I am trying to get my household on board with eating brown eggs before we get overwelmed with eggs. We are getting consistently 6 a day but we have 12 pol pullets so i had 5 OE for breakfast but our spiral egg holder is gonna be pretty full in the next day or 2.
I’ve had people tell me there is a difference between brown eggs and white. “Oh, the brown eggs make a cake rise more than white.” I’ve researched it and the only difference is the color of the shell. I also have a sister in law that thinks every egg I get from my chickens is fertilized, and she won’t eat them because she’s “eating a baby chick.” While some probably are fertilized, they don’t look or taste any different than a non fertilized one.
