Question about flooring

I see no problem as long as the pavers don't move and none of the cracks are big enough to stick your finger into. (If they are, you could get rats or mice coming in that way; while it won't totally keep 'em out, personally I'd be inclined to fill gappy cracks with as much concrete as I could get in there)

I see no point in putting gravel down before sand, as it will all get mixed together with the sand pretty soon and then what was the point.

Chickens are not going to excavate those pavers, really really. If they have access beyond the edge of the pavers then you might need a retention board or other arrangements but I was sort of under the impression the run will end at the edges of the pavers anyhow? I would totally leave them there as long as you can cover them with a lot of sand for the chx to scratch around in.
