If a hen is laying eggs she is not broody. A broody stops laying eggs and sits on the nest practically all the time, day and night, except for short trips off the nest to eat, drink, and go poop. If your hens are laying eggs they are not broody.
You do not have to save a specific hen's eggs for her to hatch. A broody hen will hatch any eggs you put under her, whether they are hers, other chickens, ducks, turkeys, geese, pheasants, whatever. They will even try to hatch golf balls.
Orpingtons are a breed of chicken. There can be different colors of the same breed. Buff Orpingtons are the most common in the United States, but this link will show you some of the different colors of Orpingtons.
