Can you explain why you rest them for 3 or 4 days? Now I'm worried because I'm having mine butchered "just" 2 days before Thanksgiving for my customers -- will they not be "rested" enough? The butcher advised me not to get them butchered more than 5 days prior to Thanksgiving (since they're fresh).
