Question about zucchini

My chickens love love love zucchini!! I have to hide it behind my back when I go in the coop and then throw it down quick lest I get flogged to death by a bunch of spastic chickens!! I shred some and freeze it to use in a chocolate zucchini cake recipe I have. Also thinking about slicing some and freezing for another stove top dish we eat!!

Ranchie, it is okay if you overplant hens, just not roosters!

My mother usually puts about 2-3 zucchini plants in her garden and is left with LOTS by the end of summer. We usually do the zucchini bread to use them up !!! or just fry em up the italian way !!!!!

here in alabama it's best to plant spinach in the fall about September. It over winters fine in the garden. I have spinach that survived the nasty winter storm that went through north Alabama this winter.

But any temperature above 70 degrees Fahrenheit and it bolts. spinach is a winter or very very very early spring crop in the deep south

since I save seeds from mys quash and trying to breed vine borer resistant summer squash, I have to plant way more than we can eat.

They freeze well, the chickens love them especially when lightly steamed so they're soft, oh and they make a great pastas substitute.

slice the squash length ways and lightly pan fry it (in only a very light coating of oil/butter it doesn't need much since it sweats when heated) for around a minute or two, to get it just a little soft then use it instead of lasagna noodles in lasagna. you cut the calories by up to half and it taste's the same!

oh and like eggplant parmigiana? use that instead of eggplant.

my parents are diabetic, one is on insulin shots, and i substitute pasta with squash all the time and everyone says it taste's the same. It is a great way to get your carbs (yes we actually need complex carbs to function, I don't care what the atkins diet says) without driving up your blood sugar and calorie count.
