since I save seeds from mys quash and trying to breed vine borer resistant summer squash, I have to plant way more than we can eat.
They freeze well, the chickens love them especially when lightly steamed so they're soft, oh and they make a great pastas substitute. 
slice the squash length ways and lightly pan fry it (in only a very light coating of oil/butter it doesn't need much since it sweats when heated) for around a minute or two,  to get it just a little soft then use it instead of lasagna noodles in lasagna.  you cut the calories by up to half and it taste's the same!
oh and like eggplant parmigiana? use that instead of eggplant.
my parents are diabetic, one is on insulin shots, and i substitute pasta with squash all the time and everyone says it taste's the same. It is a great way to get your carbs (yes we actually need complex carbs to function, I don't care what the atkins diet says) without driving up your blood sugar and calorie count.
