When in the kitchen cooking or baking, how do you crack open an egg?

On the nearest hard edge. Usually, the counter.

Lay paper towel on counter. Gently tap egg on paper towel to crack. Hold over bowl and jam fingers into crack. Fish out pieces of shell from bowl.

Perfect every time.

I have one of these egg crackers, which are great for fresh eggs. Supermarket eggs are too thin shelled.
