It's very flaky. Like pie crust almost but sweeter.

We would call it fry bread in these parts. That's what inspired elephant ears and they're mostly the same thing.

Except these are light and fluffy, almost dry. That was the closest photo I could find that looked like it. Bakeries here have them. Some cal them cow pies too as they make them big as a dinner plate.

The chocolate iced with coconut flakes sprinkled on top are my favorite, though I don't eat out much anymore. These days I make funnel cakes at home if I get a donut craving - yum!

Love doughnut! But I love pan dulce more. Maranitos/puerquitos are Thee Best! Concha are the worst! Unless you put ice cream and cream and caramel with some chopped nuts on it to make an ice cream sandwich.
