I use a traffic cone nailed to a tree with the small end cut down to fit my large birds - I like to keep the head on as a handle while plucking - and waxing. With the head on you can dunk the bird in hot water "backwards" so the water gets through the feathers.
I always just slit the throat on one side and ensure you cut the vein without cutting the windpipe - The bird will stay real relaxed until almost all the blood is out, then it is just spasms (this is when I walk away and come back a few minutes later). Once you do this a few times it's not that bad - just remember that you gave the bird the best life going while it was around.
