In my understanding, breeding siblings is a big no no, but breeding daughters to fathers, grandfathers, great grandfathers, ect and vise versa with sons to mothers, grandmothers, great grandmothers, is okay. Is that correct, or am I wrong?

You can breed siblings, but just don't breed as far with them, especially breeding the siblings, of those siblings. I'd say no more then 2-3 generations, but if problems show up in 2nd gen, then stopping is best.
 
Inbreeding is cumulative meaning that the effects add up over a few generations. For chickens, we can raise so many chicks that most of the negatives can be ignored. But after 3 or 4 generations of constant inbreeding, there will come a time when fertility, growth rate, health, and other traits are seriously compromised.
