15 sq ft is enough. I am not sure I would do the wire floor brooder, and I definitely wouldn't use plastic (just my opinion).

I don't ferment the feed, I use ACV in the water. About a tablespoon per 2.5 gallons.

why would you want to put it to the water?

In the water, I use it as a pro-biotic. It seems to make the poop less smelly, and make them absorb their food better. I also have not lost one bird raising them to butcher, never had to use ANY medication, and my average poundage has been more(miniscule, but still more) than others around me raising the exact same birds in the same time period.

Reason i asked is a lot of people i know take a shot a day and they were able to get off cholesterol medicine. I may buy a bottle just for the birds...can you give it to week old chicks?

As soon as mine come off of electrolytes (three days old), they go on ACV.
