Questions on meat pigeons

I'm thinking about raising utility pigeons but I have a few questions about them.

1. Do pigeons past the squad squab taste as good as squab?
2. What are some breeds that can't fly well, I plan on pasture raising them and I don't want any to fly away.
3. How high can breeds like French mondaines, giant runts, white kings and giant hubbles fly? Will I have to clip their wings?
4. Will they breed in winter, is there anyway to prevent this without separating males from females?

1) yes.
2) Pasture raising is very difficult as hawks love them, and their size makes them very vulnerable.
3)High enough to get on the roof of your loft/barn/house.
4)Many will continue to breed through the winter unless separated. You can always toss the eggs and give them artificial eggs.
