Quick processing question

I have a bizarre situation.

A lady is coming by this afternoon to pick up some excess roosters from me. But she wants me to dispatch them when she picks them up.

If they wait too long to get set up, the meat is not going to be good. I do not process birds. Seems like a waste

she wants you to wait till she comes to dispatch them? or are you saying she'll make you wait after bleeding until she gets there for the plucking?
 
She wants me to dispatch the birds and she will go on her way with them.

I don't know much about processing, but my gut is telling me this is all wrong.

UPDATE:

She took them to her sister about a half mile down from us. She had everything set up.

I am such a rookie.

Hi daver,

Scalding and plucking a bird with rigor mortis is going to be harder, but she may choose to wait until rigor mortis has passed. If the birds are kept cool, it's no big deal -- a bit like old fashioned game birds where in the UK at least they were hung in the pantry for days or even weeks.

It probably feels wrong, but isn't necessarily... At least I can't see a problem with it as long as she knows what she's up to, and takes some care with meat hygiene.

On second thought, I should have asked to go down there and observe. I am gonna have to learn sometime.
