I am boiling some salsa now but I used tomatoes I canned a year or so ago so it seems pretty runny. Anyway to thiken it up so I can can it as salsa? I drained as much liquid as I could, and I added a bit of cornstarch, should I just keep boiling it down?

well, I did end up adding a small tomato paste, and now will be waiting till its done in the water bath. I set some aside for my hubby to try. I just usually end up buying the packages of salsa mix as my first attempt at salsa years ago did not go well, too vinegary. But, I still am using fresh ingredients, just premixed seasonings.

I hope it turns out okay, seems like canning always makes things more watery.

I did 3 more jars of dilly beans today though.

You can not add any thickeners like corn starch or flour. It will not be safe to can! I hope you used a canning salsa recipe, because it is consumed with out boiling first (when opening after storage) you have to make sure you are using a safe recipe.
