The secret to eggplant is brine. Peel the eggplant, slice in pieces about 1/2 to 3/4 inch thick and soak for about half an hour in a mild brine solution. That will remove any bitterness in the eggplant. Then just layer in a shallow pan with your favorite cheese and some Ragu of some sort the flavor you prefer. Bake and eat...That memory is from my hippie days some 50+ years ago. Combined with a cheap but good wine and some good company it was a great and cheap meal. Of course I don't drink any more, haven't had eggplant in years and am too old and ornery to be compatible for too long with good company...but I have earned the right to be ornery.
