I saw a YouTube video where a guy used H1 hurricane ties in place of bird’s mouth cuts. Is this acceptable? It won’t have too much of a slant and roof is made from plywood and tin. It never snows down here so won’t have that extra weight.

I believe you can use those ties and just set the rafters on the top plate with no bird's mouth, yes.
