The longer you let the bird grow out, the stronger the "chicken taste." I thought my 11 + week old cornish xs tasted great. I had grown out some Dixie Rainbows (like a Freedom Ranger) before, too. The Dixies cost alot more to raise. Dixies were fed 24% protein feed. The Cornish were fed that also, but I lowered the protein to 20% at 6 weeks. I raised the DRs to 17 + weeks and finally butchered them because I was sick of feeding them. Supposedly, they were to be finished out in something like 12 weeks. The Dixies had a very strong taste that I didn't enjoy when eating as a roasted chicken, but do make great broth! The Cornish Xs tasted the best to me. They had a great taste (meat and broth) -- it was not at all bland, just not as strong as the Dixies. I thought my Cornish Xs had alot more flavor than the store bought chicken.
