So should I be prepared to clip their wings so they don't escape from the brooder when I open it?

Hmm no just put like wire on the top of your brooder... When you see them start jumping that's when you go "nah they won't jump out they are too young" ... then they start jumping their height and a bit and you go hmm can't find cardboard will do so later when I am back from work... then you get a phone call at work.... " How many quail do you have in there cos I found one running around the house"

Mine adult ones are so docile that they walk out the cage into the bin bucket for newspaper and just sit there.

finding a food source for the quail feed.
You want feeders that they dont waste food in.
You will want quail nipple waterers and Dumbell waterers (my preference) cos they poop in it.
You will want sawdust cos they poo alot
You will want a cage where the poop fall directly to the ground
You will want separate cage for splitting the males and females up.

yes theys hould be able to get it, and can you PM me the name and phone number of that store, its closer to me as well lol.

and no you don't have to clip their wings. They won't fly that far while they are still in the brooder.

BUt IMHO the Bobs taste better, I had a friend cook both and only they knew which was which, and both cooked the same way at the same time, and after eating several I could tell which was a Bob every time.

I brooded bobs, years ago, in our basement utility room/ storage room/ shop and at 6 weeks they started disappearing. I would strongly recomend a cover because we were finding hidden, dead chicks for the next year after that.
