What makes the whites stick to the shell on boiled eggs??? I recently boiled a pot of eggs... all the white eggs laid by my leghorns I could not peel but brown ones laid by my RIR where fine ... they were all boiled at the same time
 
:barnie I thought it was me boiling my eggs "wrong" cause they were impossible to peel ... My Dad always said I couldn't boil water :lau & I'm not fond of cooking either. Read somewhere about "fresh" eggs not peeling nicely. I love boiled eggs & devil eggs so I buy eggs for that & use my fresh eggs for baking & whatever else. I also notice fresh eggs don't scramble "fluffy" so I add some milk to it but it's sure makes nice over easy eggs.

Read somewhere to add some vinegar to the water when boiling fresh eggs, haven't tried that yet. Is there a "trick" to boiling @Ravynscroft fresh eggs other than aging it? Feel silly buying eggs to boil :lau
 
I shock mine... as soon as they are done boiling, shock them under ice cold water... as soon as they cool enough that you can stand to hold and peel them, start! I also aim for banging the shell over the air cell spot first, sometimes popping that can force puffs of air around the egg to help separate...

As to the white eggs sticking more, probably because the shell is slightly more porous while the browns have that brown coating ever so slightly clogging some pores...
