Don't panic. Chickens are not all that scary. If your hen sneezes, it's not the end of the world, and it doesn't mean you have to kill her. If you forget to wash your shoes, or the litter gets a little wet, it won't hurt them. But it is smart to keep a dedicated set of shoes (rubber clogs maybe) just for the chicken house, to be safe. Just use your common sense and it will go fine. Chickens are very tough.
I use both a 2 gal. galvanized waterer and a red-based 1 gal. plastic waterer, and the chickens do prefer the plastic, but I think it's just because it tastes better. Plus they gotten used to expecting ACV in that one, which they apparently love. I don't measure it out; I just eyeball about a tablespoon per gallon.
