Red wattles on 3 week old pekins

Most of my 3 week old pekins have small red wattles does this mean they are definitely male? I will try to get pictures later

Going just by wattles isn't that great. With pullets even can have red wattles, especially when excited.

If the comb is large, pink/red too, then most likely a cockerel.

Wattles are good indicators for certain breeds, like Polish, as you mentioned there.
