refrigerating eggs

I have to put my 2 cents in. commercial eggs get washed and sprayed with a mineral oil to replace the bloom. they can then last 6-8 months. of course if your used to store bought eggs you wouldn't know the difference in taste. fresh is much better!

My daughter is taking courses to become a Registered Nurse. On her early newborn section they studied keeping chicken eggs. If you coat your eggs with mineral oil and store them in a crock they can keep up to 6 months when stored in a cool room. Now no one wants to eat a 6 month old egg, but I think it tells us we are safe in eating eggs that we have kept cool for 6 weeks. For more information go to the USDA web site "How to store fresh eggs without refrigeration".
