I have no idea mine were adult when I took them in and I was told they were males and they are much larger. so I was only guessing.
I do believe in the Toulouse the male grows larger, but because you don' t know age or origin size is relative. Have you had your two existing geese through a breeding season? If they didn't lay eggs, they're probably male just as you were told. You should have seen mating behavior regardless though.
