Rescue remedy dosing for Rooster/Hen

Hello everyone, So, one of my rescue hens (rescued late September) has suddenly gone mental and tries to attack me while feeding and watering them everyday?! She crows like a rooster when she hears me in the morning and again if I'm out and about the yard. As it is 3ft deep in snow, they are inside a large pen with deep litter to keep from freezing. Everything was fine until She/he killed a small weasel two weeks ago and then a vole last week. Now she attacks me! I tried pecking her with my finger by her neck but she moves away only to fly at me when given the chance. Partner wants her to be stew. I absolutely refuse! Could I give her rescue remedy to calm her down?!? And if so, what dosage??? Without spurs, has she transformed into rooster?!? 🥺🙏🏻
 
Photo of angry bird in garden in the fall when we rescued her and she had eaten really well here for a month. Other photo is her last month. Just wondering if calming herbs or something might work to chill her out! Coop is attached to long run that leads to clear covered pen. Total size of outdoor room is 20ftx10ft which I think is ok for 4 hens until they can free range our garden in spring. ?

He looks young probably going through some hormone changes. There's no way to change his behavior at the moment since he's under the influence of his hormones.

To make for some peace is to keep him away from your hens and you. Best to have a separate area for him till the hormones fade, which takes around 3 to 4 months.
 
I doubt that's going to do anything.

My remedy to a fiesty rooster is to hold it down for a few minutes everytime it jumps at you or butcher him
Not sure he is a he? Looks like a hen but noisy and feisty like rooster. He/she is young, you are right. I never thought about hormones.... I will try to not be terrified and hold her down like you suggest, see if she gets the hint.
