Resting a Shrink Wrapped bird?

Awesome! I learned something today as well!

Yeah, I've seen quite a few barrels for sale. After contacting the posters they eventually say that they were used for car wash soap. I have found a source for food grade HDPE barrels that previously had olives in them. I may still go with a huge cooler though. It might be more useful throughout the year.

I'll try a to do both ways on similar birds and see if there is a difference. Yay! Experiments!

On a side note, I think it would be neat to use vacuum bags to store chickens in, but put marinade in them so that it's already taken care of when you pull them out for grilling.

last time we processed we used shrink bags.

we use normal pink water - clear water tubs....

birds were thoroughly chilled, then bagged, shrunk then rested for 3 days... then to the freezer.

no issues and they taste great
 
We used a clean 100 gallon rubbermaid stock tank for chilling and just plain old cold water for an hour or so. Then we put them in the shrink bags and let them rest for 3 days. No issues here.
