As good as it sounds, I expect the bacon would overpower the flavor of the chicken. I ruined a pot of chicken soup once thinking it would benefit from some diced bacon.
I'd try it with a store-bought chicken that doesn't have much flavor to begin with before taking a chance on one that I'd raised and butchered.
With my birds I've quit marinating them or seasoning heavily because the flavor is so much better than storebought.
Well, the verdict is in and the bacon blanket was a big hit
. I did a light brine on him overnight, then got scared that it might taste too salty with the bacon, but in for a penny......in for a pound and it was tender and delicious. I didn't use any seasoning other than laying the bacon on it. It kind of tasted lightly smoked. This is all that's left and I think it will be all gone after we have lunch tomorrow.
I definitely recommend trying this with skinned birds, nice flavor and quite juicy
