Rooster keeps attacking horse

So far, neither of my horses have kicked or spooked, though one of them started pinning his ears. They're used to the whole flock hanging out with them in the pasture. Funny thing, if you catch the cockrel in the act (turn the horse to face him or just yell "hey!"), he'll stop. Other than that one bad habit, he's pretty good; he lets me touch him and doesn't attack people who get close to his flock. And thanks for the clarification. I knew the terms, I just didn't know the ages.
"So far..." being the key phrase here. If the one is pinning his ears, you know he's getting PO'ed. I would lock that cockerel up before someone (meaning a human - not the chicken) gets hurt. Even the most bomb-proof horse can go off at anytime. Don't let your guard down.

Just an idea, since he doesn't attack the horses when you are not riding them, possibly he thinks you are fighting the horse by being on top of it. A weird idea but I say this because I have read threads about people with pet chickens/ guinea fowl that are as tame as a dog that just flip out when they pick something up or sit on something, must be they think you are engaging the object, and they either want to join the 'fight' or neutralize it. This is just a odd idea but I thought it was worth saying.
