I have 3 Lavender and 4 Buff Orpington pullets that should be laying eggs >> any time now <<.
My rooster who is the same <> age as the said hens has started crowing and mating all my laying hens like crazy about 2 weeks ago.
I look out the window yesterday and he is mating one of the lavender and then one of the buff's. I was like, wait a min. I have't even gotten eggs yet, wait your turn buddy. Is this ok? Will they start laying for sure now in the next week or so???

I find this confusing....how old are your 7 pullets and 1 cockerel?
(they are not called hens and roosters(cocks) until they are one year old.)

Do you have older birds too?

That said ....cockerels mature sexually before pullets...which can cause big problems as pullets are not ready to be mounted and cockerels are too dumb and hormone driven to know that. If the pullets are accepting him mounting them, then they should be laying very soon.

Currently, I have pullets and a cockerel of the same age, all around four months old. The cockerel is prancing around, sliding on and off of every hen and pullet who will hold still long enough. The pullets have not laid their first eggs yet.

So your youngsters are completely normal.
