Rooster or Hen only behavior...

I have a question about Rooster verses Hen behavior. I have one Black-Star Sex-Link, and two Golden Campine. They are all just over 4 months of age.

I know that the Golden Campine are extremely hard to sex.

One of them I am 99.99% sure she is going to be a Hen. The other one I keep bouncing back and forth.

My question for the experts is:

(All three of them do this)

When I go to pick them up and put my hand on their back to keep them from jumping, they put their wings out just a little bit.

I have been around hens before and I know this is the “ok I am ready for some loving from you, Mr. Rooster” pose.

Do only hens do this? Or can roosters do this too?

It is being submissive. Both sexes will do this. Sorry. I know it is an annoying wait to see what you have.
Something only roosters do have is shiny saddle feathers. The only way I know my Production Red is a rooster is that he has shiny feathers.

Golden Campine have "hen feathering", so both sexes have the same feather type. Their tails are, however, the same length. I have read that Campine roosters have much longer tails.
