Can’t tell if these are saddles or not. The hackles don’t look pointy to me. Better pictures from the side including clear shot of the saddles would be helpful.

A much better way to determine gender is using the hackle and saddle feathers. On a male, they'll be long and pointy, on a female, they'll be rounded.
