Rooster possibly to keep for EE pen - Question????

If the cross roo was out of EE like those, you'll get a very nice variety. Also if you crossed him(the marans cross) with hens like these you will get some birds similar in color to Creles. Creles or Crele-like birds often are popular due to being eye catching. It's the barring over brownish hens or black breasted red rooster color pattern.

The Marans cross roo over a black hen will throw mostly or even all cuckoos, solid blacks with or without color leaking on the necks.

I'd say try out using that Marans cross roo, especially if you like color variety which you seem to.

I know some things about genetics, maybe more than the average chicken owner - but there are lots of folks here who know more.

Blue and white are both shell colors, with blue being dominant. Brown is a coating, contolled by 13 various genes (at least 13 is the most popular among current opinions). A green egg is a BLUE egg with a BROWN coating.

To answer your question about meosis starting with a green layer bred to a white layer...

You would mostly likely get another, lighter shade of green. Whether the parents are homozygous or not, the brown egg genes are very difficult to breed out, especially in only one or two generations. So if offspring are Oo (heterozygous, displays as Blue shell) or not, you will still get greenish eggs. Because brown genes will passed from the green laying parent as well, and make a coating over the blue shell.

In order for the other scenario of 75/25 when breeding back to homozygous or heterozygous to work...
You would have to start with a Blue Layer and White Layer - no brown egg genes involved at all that could make a phenotype (visual) green or cream color result. Also, it would depend on whether the blue laying parent was OO (homozygous) or Oo (heterozygous) for blue shell color.
