Rouen Ducks Processing?

Ok, let's see if I can make this clearer for the crayon group. Does anyone use their ducks for food? Are Rouen ducks as tasty as they claim?

Does anyone here have Rouen ducks and process them? How do they dress out?

I have Rouen ducks for the first time and I plan to process them (that's what it's called when you kill animals for food) this fall. This will be my first time with ducks, so I'm interested to know how it goes for you! I suspect 3 out of 4 are drakes, so I'll be finding out if the meat is as good as they say! I'm already looking up YouTube cooking tutorials.
