Help!!!! I sold a neighbor some eggs to yesterday-she called me this morning and asked how old the eggs were because when she fried some, the white ran all over. I have been using my eggs for so long I don't remember how store bought eggs do. Do the whites hold their shape better than farm eggs or is something wrong with mine? The eggs I gave her were only a week old & less. She said she was afraid the whites won't "hold" up when she makes a cake? Anyone know what she could be talking about????

There is an easy way to check to see if an egg is fresh. Put it into a deep container of water. If it floats, it's bad. If it sinks it's good. Egg whites usually run on a supermarket egg, doesn't mean they are bad, but they could be a bit fresher.

Some factors could be lack of enough protien, old hens or eggs are getting warm. I had the same problem and found a very good article but, I can't remember if I googled it or found it here. I'd start with upping the protien level.
I was having not only runny whites but also runny yolks and the eggs in many cases were not even a day old. I got rid of my older hens, mainly for a better breed, and I haven't had the problem since. The article also recommended gathering eggs two or three times a day so they don't get warm.

Well, my hens get 22% laying pellets and a little scratch in the evening. They are old hens-not quite 2 yrs old I think. I guess the eggs could be warm as I keep them on my counter and not in the frig for a week or two. I just haven't noticed the whites being runny when I cook them. I was thinking that the whites were runny because they were very fresh compared to store bought eggs that have been sitting for who knows how long. Oh well!!

22% is plenty protien and 2 years is not that old. I'll see if I can find the link on runny egg whites. There were a lot of different reasons.
