They have 24/7 access to there purina flock raiser pellets and veggies here and there along with scratch (mostly eaten by our chickens) or grubs every now and then

I suppose that this is too much for them, hence the fat accumulation.

How do you recommend I lower there intake? I have a flock of 5 ducks and three chickens so I’m not sure how to lower the amount they eat

I feed my ducks and chickens flock raiser. But they don't get treats everyday. Also, I don't have food available for my ducks at night due to the setup. They have free access during the day.
I would limit treats and maybe cut the ducks off of food at night. Do they free range?

Ducks do tend to get fuller in the abdomen when they are laying.

I didn’t say it was ascites. Just wanted to share. Info. I have only had a chicken hen with it she looked like she was pregnant and lived quite a few years with it. Might be a good idea to research this breed to see if they are susceptible to it. My birds get 6 way scratch everyday but being I have 35 it’s gone in a Few minutes. So no one gets too much.

I would only feed them twice: In the morning and in the evening, but provide lots of vegetables for them in between.
