Someone posted to put zucchini in a salad spinner.
Yes, I saw that. Sprinkle whatever salt the recipe calls for on it, mix it around, let it sit. Then spin it out. Great idea!
Just an Idea/tip. Save the liquid portion, rather than dumping it. Then incorporate that into your liquid portion of recipe contents/amount.
This way the flavor is still in your mix.
I'll see what liquid is required. I'm trying to adapt my sweet recipes from sugar to honey, and when you do that, you need to decrease the liquid to balance out that from the honey.
 
We are having people over. I need gluten-free, corn-free, nut-free, shellfish-free food.

I'm thinking of potato salad, baked beans if I can find a way to make them that takes 20 min or less of baking... and what?

Does wild rice soup go with those and .... what?

It is also hot, of course, and all those take more heating than I want so I don't want to do much more heating. Maybe I should do something else anyway.

Any suggestions?

How about gazpacho? Cold soup starting with tomato juice and spices and raw vegetables. I start with Spicy Hot V8. It’s better than it sounds. Google a few recipes and see what you think.
 
I got my bone density score... My bones are less dense than they were 3 years ago when I had my last test. -1.5, for anyone who knows what that means.

I checked my calcium supplement... it's a lot less than I thought it was. So I'm going to take more of it and look for a better one. Same with the the Vitamin D. I cover up when I go outside (long pants, long sleeves, hat), so I don't get much vitamin D from the sun. But I don't have much sun damage to my skin, either.

So, more walking! More calcium, more vitamin D. I work out on the elliptical, but even though that's a weight bearing exercise, it's very low impact. I like that, as it's easy on the knees.

But it's the impact that helps build stronger bones. So I'm going to skip on our walks. Not skip the walk, skip on the walk. 50 steps times 3 walks. I don't jog, I don't run, but I can skip.

I used to do something called "the Sally hop" down the hall at work. (I didn't name it that; a coworker did, and it stuck.) It's sort of a sideways skip. I bet that's a good bone building exercise too.
 
What do you fill them with?
I take and gouge out the center contents of the zucchini. Chop it up, and sautee it in the skillet with onions, garlic, mushrooms, and other veggies on hand. I have added nuts at times. I use EVOO for my frying oil. Then I place the contents into the hollowed out zucchini boats, that are on a shallow pan. and bake for about 30 minutes.
I'm just estimating the time,, as I always judge by the way things look. Also temp is at about 350°F. or less. The sautéed items are already cooked, so no worry of things being raw. The thin boat portion of zucchini cooks in short time.
The boats of course are rounded on top with the contents of the Sautee skillet.
You can experiment with dust on seasoning to taste.
