I wish they would put the lips in when they build the coops

Many coop builders don't really know chickens.
They make it look good and cute, but they can be highly non-functional.

They are mennonite builders - though I guess they probably have much bigger set ups when it comes to their own chickens.

Hard to say. Mennonite and Amish are huge marketers. Proof is in the pudding.
