Sausage & Pepper Frittata!



This is so good gang!!! From a Rachel Ray mag. recipe.

1 lb. Sweet Italian sausage, 1 bell pepper, chopped 1 onion, chopped 1 TBS butter
( casings discarded )

1/2 tsp. crushed red pepper, 8 large eggs, 1/4 cup of milk, Salt to taste

1 cup of Feta cheese crumbles



In a Med. nonstick ovenproof skillet ( I used a med. or small iron skillet sprayed with Pam) cook the sausage and crushed red pepper. breaking up the meat, until browned, 7 to 10 minutes. Using a slotted spoon, transfer to a med. bowl.

In the same skillet add the bell pepper and onion, cook, sirring until softened about 7 min. Stir in the cooked sausage and the butter. reserve the bowl.

Pre-heat the broiler. In the same bowl whisk together the eggs, milk and 1/2 tsp salt and pour into the skillet. Cook scrambling the mixture until almost set, top with the Feta. Broil leaving the oven door slightly open, until set in the center, about 5 to 10 minutes. This is so good!
