Saxony Duck processing

Your year old Muscovy would be tough unless you cook him right. Here's a good recipe for you. Cut up your year old Muscovy into segments, braise in olive oil for a few minutes, pour in two bottles of beer, add ginger root and a few tablespoons of soy sauce and simmer for 30 minutes

I would take them at 12.5 weeks, but ask others about Muscovy's as they may be different.

I free range them and confine at night
