Scared Chickens?

Why is it when I feed Chickens, they run right up to me and take stuff right out of my hands, but when I go to pick them up they get really scared? I like to hold them sometimes, or if I move them to some other place.
 
It takes time! We hold ours every day, and some of them still don't like to be held. Our del's, BO's, and EE like to be held

where as our BR's, leghorns, and silkys don't like it.

They'll even jump onto my shoulder, but just don't like to be held. Just keep holding them! Our ducks, don't even get me started, cuz you would think we beat them daily!

I am by no means an expert...
but for me, mine like to be held mostly in the evening right before they go to bed for the night.
I just sit on a stool with a towel in my lap(to keep from getting scratched up) and wait for them to jump up there.
I will sometimes pat my leg if they are just looking, and up they will jump.
They will also get up om my shoulders and peck at my hair

They like to be gently pet.
