Scent Glands

If you're talking about the one above the tail, you shouldn't have any problem. I can't say I've had one that yellow-stained the meat, but I've cut into them a bunch of times removing them, without any problem. Now I just cut the tail completely off- it's easier to get the gland off and looks better too.

I've sometimes forgotten to remove the oil glands, and cooked the chicken with them intact. It doesn't hurt anything, even the meat on the tail will be fine. The oil glands just cook into solid little pellets. They don't cause the meat to taste funny or anything.

What other reasons can you find that there may be yellow puss pooled around areas of the meat? I have no pictures, sorry.

I have never found yellow pus pooled in any of the meat I've butchered. If there's pus, there's infection. The oil glands do not produce pus. They produce oil.
