Scotch eggs

Try this some time, I think you will like it.

Hard boil some eggs, then peel and and make sure they are clean. Take whatever your favorite sausage is and completely cover the egg with the sausage. Will look like giant sausage balls. Then crack another egg or two into a bowl, stir this up and dip the sausage/egg balls into it. When covered nicely, dip those into a bowl containing finely crushed corn flakes. When coated well, place sausage balls into a baking pan and cook for 18-24 minutes at about 350. Serve with your favorit side like tabasco or salsa.

Traditional Scotch eggs are covered in Banger sausage but it's hard to find and then rolled in bread crumbs. I have found that using smaller eggs makes the sausage easier to fry. We dip ours in mustard, I don't know if I ever would have thought to use salsa. Will have to offer that on the table too next time.
