Scratch...When? How much?

I have 3 chickens, I will throw them a couple of handfulls out about twice a week. One of those hand fulls will go into the coop so they scratch and mix up their bedding alittle.
Regular feed all the time.

I was giving them a handful or two everyday but they stopped eating their feed, so I cut back to about twice a week.

when you give them bread do you let it dry out or do you give it to them soft?

Also does anyone mix their layer crumble with cracked corn?
