Seed safety?

I was cleaning out my cabinets and came across some unhulled black sesame seeds and chia seeds I had been adding to smoothies. Are these seeds safe for my girls? Are there any added benefits these seeds might contribute by being dumped in with the pre-bagged scratch? What about making some type of greens box with chia sprouts? All thoughts, ideas & suggestions welcome! I get to learn, my girls get health benefits and my girls & I both get added entertainment value...Win/Win!!
 
I'm thinking of make fodder cakes after the growing season ends. Chia seeds are really cheep (haha) at Costco, so I'd like to know about this too.

So is quinoa, but someone posted that it's harder to sprout.
 
I made some "pallet gardens" for my hens. I took pallets, but honestly I think it would be easier to just build a box with a cross in the middle, covered it with heavy duty chicken wire, and planted grass and herb seeds in it. The girls couldn't totally rip up the plants, but could trim the tops once they were above the chicken wire.
